Bozal: A Spanish term that means “wild” or “untamed”

Bozal Mezcal’s inspiration for their name refers to the wild species of Mexican agave that grow in the hard to reach, uncultivated lands of Oaxaca and Guerrero. As well as their family operated distilleries, or mezcaleros, that use untamed traditions to distill small, craft batches.

Bozal Mezcal is a 100% artisanal product made in Oaxaca and Guerrero, where indigenous varieties of agave grow wildly on steep hillsides. The varietals harvested within this region produce a mezcal with flavors that are exotically intense, with rich earth tones and savory smokiness.

At Bozal, flavors are produced by a traditional extraction process from the heart of the maguey. The agave hearts are cooked in conical, grounded pit ovens and mashed by a stone wheel turned by a horse, a process that dates back 200 years. Rather than adding artificial yeast, Bozal Mezcal uses an open-air fermentation process where sugars are fermented using naturally occurring yeast. The mezcal is then double distilled and packaged in beautiful, rustic ceramic bottles. The bottles allude to traditional terra cotta copitas, sometimes used for drinking mezcal. Bozal’s artisanal approach results in a wildly refined, unadulterated style of mezcal.

Bozal Mezcal Ensamble

Ensamble is a blend of three agave species; Barril, Mexicano, and Espadin. A slightly smoky, yet herbaceous undertone rests on the center of the palate, while citrus and floral notes from the Barril are introduced and strengthened by the warm viscose finish of the Mexicano. This is a light and easy sipping mezcal, which will delight and surprise you with its complex lingering finish.

Bozal Mezcal Cuixe

Driven by intense citrus and strong minerality, the Cuixe has a dry entry. As is experienced in the rich tropical fruit on the palate that moves to sweet potato on the front. Green vegetal notes in the mouth and a dry smoky finish then follow. A complex flavor profile that proves quite enjoyable.

Bozal Mezcal Ancestral- Limited Release

This mezcal rounds out the exceptional character of the Papalote agave itself. The floral sweetness that presents itself on the palate is complimented by the aroma of wet earth on the nose followed by a complex sweet citrus finish, which balances it out excellently.

Bozal Mezcal Tobasiche

With an unconventional sweet nose this mezcal exerts traces of quince, anise, and strong minerality. This bouquet is complimented by rich herbaceous botanicals on the finish.

Bozal Mezcal Borrego- Limited Release

A dry mineral base is offset nicely with an abundance of fruit, herbaceous notes and nuttiness. A viscous entry coats the mouth leading to a fruit forward mid palate with subtle sweetness that shines with bright citrus and persimmons. The finish is smooth with flavors of smoked lamb.

Bozal Mezcal Coyote- Limited Release

A stunning expression of the unique character of the Coyote agave. An earthy and slightly smoky entry leads to a mid palate that is driven by flavors of minerality and rich dark chocolate. Finishes dry and balanced, indeed an enjoyable mezcal crafted for sipping.

Bozal Mezcal Pechuga- Limited Release

The Pechuga expresses a delicate balance in which the smokiness is softened noticeably by the protein and wild fruit. A rich mouthfeel offers flavors of roasted fruit, subtle minerality and a slight smokiness, finishing dry on the back of the palate.

Bozal Mezcal Castilla- Limited Release

Driven by the region that the Castilla was sourced from, the aromatics are fruit forward and earthy. A slight sweetness is evident on the palate with flavors of roasted agave, mocha and fresh mint and pepper, finishing smooth with subtle hints of smoke.
