Einstök Icelandic Winter Ale
The holiday spirit of Einstök’s Winter Ale is inspired by the addition of spruce tips (that happen to be hand-picked from the backyard of their brewmaster’s parents’ house). The spruce tips are clipped in the springtime when they are young and fresh, and then meticulously steeped with a proprietary process that brings out all of the subtle flavor possible. From there, a little yuletide magic at the brewery fuses it all together to create this rare and unique ale.
But what makes their Winter Ale so special is all in the barley – grown in the southeast of Iceland, where the cool and concentrated growing season creates wonderful flavors. It is then smoked with birch that is sustainably harvested from Iceland’s largest forest: Hallormsstaður. The native barley is expertly smoked to the brewery’s specifications and standards by the award-winning Icelandic distillers at Eimverk in Garðabær, whose process is designed specifically for fermentation.
