Meatless Cowboy Beans
with Smoked Beer
Your vegetarian buddies long for that smoky, meaty taste, but their desire for health and love of animalkind prevents them from enjoying it. Here’s how to get around the issue…
2 lb dry pinto beans
1 medium onion
1 tbsp chili powder
1 tbsp garlic powder
2 tbsp sea salt
1 tbsp black pepper
1 tsp ground cumin
1 tsp oregano
1- 4oz can El Pato salsa de chile fresca
(Mexican section of any market)
1- 500ml bottle Aecht Schlenkerla Rauchbier
(this brand only please)
Soak beans overnight and drain water in large pot covered by 3 inches of water
Bring to a boil and simmer for 1 hour,
adding only the salt and pepper.
Next add the bottle of Rauchbier and the other spices and simmer slowly for approximately 1 more hour keeping the liquid about and inch or two above the surface.
